Uttapam is a common South Indian breakfast recipe. Usually, it is a thick pancake made with fermented lentils and rice batter, and veggies topped on it. These are mostly served with Sambhar, coconut chutney, Tomato onion chutney, Kara chutney, Peanut chutney, Podi, etc.

Apart from traditional Uttapam, there are many other variations of Uttapam like Instant Rava Uttapam, Ragi Uttapam, Oats Uttapam and many more can be made.

I personally prefer Oats Uttapam with lots of veggies on it. It is the healthiest choice of Uttapam. As oats are full of nutrients so I always try to include this superfood to my daily diet in different ways. Oats Uttapam recipe is one of them.

Ingredients for Batter:

Oats (Quick oats) - 2 cup

Sooji or Rava  - 1 cup

Salt - 1½ tsp

Curd - 1½ cup

Black Pepper - ½ tsp

 

Ingredients for Topping:

Oil - 4 tbsp

Carrot - 1 medium (Grated)

Green chilli - 1 ( Finely chopped)

Onion - 1 medium (finely chopped)

Tomato - 2 medium (Finely chopped)

Sweet corn - ¼ cup (Boiled)

Coriander - a handful (Finely chopped)

Ginger - 1 inch (Grated)

Salt - 1 tsp

How to make Mixed Veg Oats Uttapam:

  1. First of all, Add Oats, Sooji, Salt, Curd, Black pepper in a bowl. Mix all the ingredients by adding water well. Consistency of the better should be semi-thick.
  2. Now cover the bowl and keep it aside for 20 mins.
  3. Meanwhile, take another bowl and add Carrot, Onion, Green chilli, Tomato, Sweet corn, Coriander, Ginger to it. Mix all the ingredients well.

  4. After 20 mins check the batter. If it seems too thick add some water to it just to make the batter consistency semi-thick. Give it a quick mix. Actually Sooji and Oats absorb the water while fermentation process that makes the batter thicker.

  5. Now it’s time to prepare Uttapam. Put a Pan on the stove on medium-high heat. When the Pan turns hot, Pour some oil on it.
  6. Now pour 3 to 4 tbsp batter on it. Spread the batter in round shape using a spatula with light hands.
  7. Now quickly sprinkle some topping mix on it using fingers. Give a light tap to topping using fingers so that it can set on uttapam well.

  8. Sprinkle a pinch of salt on it.
  9. Sprinkle some oil on it.
  10. When the base is firm flip it and cook for half a minute just.
  11. Uttapam is ready after that. Transfer Uttapam to a plate. Prepare all the Uttapam like this.

Tips:

  1. You can use just Onion, Tomato, Ginger and Coriander for topping. Other vegetables are optional.
  2. Batter consistency matters a lot. It should be perfect to make perfect Uttapam. It should not be thin and should not be very thick too. For that, you have to keep in mind that while adding water add little bit at a time. Mix and then add more if required.
  3. Use non-stick pan if possible. Otherwise, grease the pan with oil well to prevent the sticking of uttapam.
