Red Rice Healthy bowl recipe is the one of the healthiest option for weekend lunch. I prefer eating red rice at day time as it needs more time to digest. And instead using preserved broth in this recipe I made the broth with few vegetables instantly which I have used to cook red-rice. Overall recipe is easy to make but little time consuming since the red rice needs time to cook.

Directions

Keep the flame low to medium as per the need. And you can use more vegetables in the broth. Feel free to use more spices in the broth based on your taste but it should not be thick, keeping it waterish will cook the rice well.

Step 1

Slice all vegetables in chunks to make the broth. Note - Lemon and Tomato has been used for garnishing so keep them seprate.

Step 2

Turn on the stove, add oil and Hing (Asafoetida) followed by Jeera (cumin) seeds. After 10 secs, add all the vegetables including green chilli. And roast it for 1-2 minutes before adding spices. Add salt, black papper and coriander powder or leaves. And stir it, Add water and cook it for 10 minutes. Broth is ready, strain all vegetables and separate out the soup.

Step 3

Soak the red rice in water for 30 mins, add butter in the pan on low flame, add soaked red rice and stir it for 1-2 minutes. Add 2.5 cups of broth we have made fresh, stir it and lid it, Cook it for 35-40 minutes on low flam. once cooked keep it aside without removing lid. after 10-15 minutes, prepare your bowl.

Conclusion

Roasted tomatoes makes the bowl awesome and more healthy. there are lots of benefits eating roasted tomatos if you don't like tomatoes eating raw. you can sprinkle salt as per tour taste on it.
